Since the Kombucha fungus constantly reproduces it is quite common to give away some surplus to friends. You may wanna check with your friends and family.

Should you have bought a Kombucha fungus from an unknown source then please take great care that it is clean and healthy. Generally, it is rather difficult to separate a healthy Kombucha from a „mal-conditioned“ one.
Here are some hints how to make a first assessment :
A healthy Kombucha has the following features :
ductile, jellylike matrix
Color somewhere between a bright brown, milk like and pink
neutral, maybe acetous smell
Be extra careful if the fungus exhibits any of the following features :
spongy fungus
many dark fibres (shows little care)
moldy smell
 | The shape of the Kombucha fungus is of no importance. It derives from the cross sectional area of the fermentation vessel. Therefore the fungus may grow in any imaginable shape or may be cleft in any conceivable shape. The fungus displayed on the photo has been grown in a mixture of ginseng, dog rose and black tea (which is why it is reddish) |
On this picture you see a fibre on one of the edges of the fungus. Such fibres are a sign of intense activity and are no indication for poor quality. On the other hand - from time to time - it might proof aesthetically prudent to free the fungus of particularly old fibres.
