My Water-Kefir grows very fast – what can I do?
There are regions where the Water-Kefir reproduces very quickly. Kefir-lovers have reported that the Water-Kefir can multiply within one week’s time. You may allocate the grain to several vessels without any problem. If there still remains any surplus you may wish to give it to a dear friend and include a short manual.
My Water-Kefir grows very slowly!
Water-Kefir grains are rather picky companions. In some regions they grow enormously quick whereas in others the rate of growth is extremely low. Unfortunately I do not know the reason for this. Probably quality of air, water, ingredients, and temperature are important determinants. My Kefir doubles every 4 weeks; others report duplication after one week, only. One of the reasons for slow growth (among others) is found in the high amount of chlorine in the water supplies of the bigger cities – here you should switch to the mineral water from the supermarket. Apart from this its all about trial and error.
How long can I use my Water-Kefir?
You may use the Water-Kefir indefinitely. The only reason why you should wish to dispense with a culture is that third elements may be generated due to the usage of dried fruit (kernel, peel…) and get mixed with the grains.
What do I do about Kefir if I plan to go a greater trip?
This is a problem we all face at some point. The best solution of course would be to take the Kefir with you stored in a screw top jar so that you may have your Kefir drink every morning. Else there are 2 possibilities:
Firstly : You find someone who helps you out during the holiday.
Secondly : You store the Kefir using a medium containing of water and put it into the fridge. When stored in the fridge the Kefir is not that active and can last for up to three weeks. The generated drink however is not suitable for consumption and the Kefir will require some time to recover its strength and activity.
Note : Some Kefir-lovers reported that they had successfully frozen the Kefir. My experiences were of limited success, which is why I recommend this procedure for people who own a spare Kefir. Please note that after having been frozen the Kefir will most likely need several weeks to recover.
Can my Kefir corm get contaminated?
Usually the Kefir corm is a capable symbiosis of various kinds of yeast and micro-organisms, which is quite able to counter any outside attack. This is the main reason why the Kefir could prevail this long on this planet. However, if you should find that your Kefir drink tastes differently you should be very cautious. It may prove prudent to dispense with the odd one and start a new culture.

Does the Kefir drink contain alcohol?
Unfortunately the final Kefir drink exhibits an alcohol concentration of up to 2 %. The exact amount is not easy to ascertain as it is determined by the fermentation period, the size of the corm, amount of crystals and the temperature as well as many other circumstances.
Is Water-Kefir suitable for diabetics?
Unfortunately the final Water-Kefir contains a relatively high amount of sugar. Since only a negligible amount sugar is being used the entire amount of sugar will have to taken into account. A alternative for diabetics is the Milk-Kefir.
May I drink Kefir during pregnancy?
The Kefir drink exhibits an alcohol concentration of up to 1 %. ( Determined by several factors ) and is not recommended for pregnant women .
